French Onion Chicken Casserole
Megan has an easy casserole in the Sparkle Eats kitchen this week that’s perfect to use up any left over chicken you may have from grilling out (or using a super market shortcut with an already prepared rotisserie chicken from your local Sparkle), plus using some staple items you most likely already have in your pantry. The whole family is going to love this one!
To make this casserole, you’ll need twelve ounces of egg noodles, cooked according to package directions, three cups of cooked, chopped up chicken, one 10.75 ounce can of cream of chicken soup, half of a cup of Greek yogurt, one 16 ounce container of refrigerated French onion dip, a fourth of a cup of chicken broth or more as needed, one cup of shredded mozzarella cheese, divided, and one and a half cups of French fried onions.
Preheat oven to 350º. Lightly spray a 9×13-inch pan with cooking spray.
In a large bowl combine chicken, cream of chicken soup, Greek Yogurt, French onion dip, chicken broth and 1/2 of a cup of mozzarella cheese. Stir in cooked egg noodles. If the mixture seems too thick, add more broth. Pour mixture into a 9 x 13-inch baking dish sprayed with nonstick cooking spray. Top with remaining cheese and French fried onions. Bake 25 to 30 minutes, until heated through.
