Green Bean Potato Casserole

This Thanksgiving, we’re combining two classic and favorite side dishes. Green Bean Potato Casserole is easy to put together and is topped with a crunchy bread crumb topping. This dish is sure to impress guests!

Start with one chopped onion, three potatoes, peeled, cooked and mashed, 10.5oz of green beans, cooked, two eggs, 1/3 cup of grated Parmesan cheese, 1/2 tsp. of Italian seasoning, 1/2 tsp. of salt, 1/2 tsp. of freshly ground black pepper, 1/4 cup of breadcrumbs and 2 tbsp. of butter, cubed.

Preheat oven to 350°. In a medium pan over medium heat, cook onion until soft. Transfer to a large bowl. Add mashed potatoes and green beans. In a small bowl, combine eggs, cheese, Italian seasoning, salt and pepper. Pour overtop bean mixture and toss to combine. Transfer to a baking dish sprayed with non-stick cooking spray. Top evenly with bread crumbs and butter. Bake about 20 to 25 minutes.
