Salmon Burgers with Avocado Salsa

When you think of burgers, you usually think beef. In the Sparkle Eats Kitchen this week, we’re making burgers out of salmon and topping them with some fresh avocado salsa. This is a great light dinner that can be put together in about 20 minutes.

For this recipe, you will need 1 pound of salmon fillet that is skinned and chopped fine, 1/2 cup of panko crumbs, 1 egg, ¼ cup of chopped green onion, 1/2 of green pepper that is seeded and chopped, 1 tablespoon of finely chopped jalapeno pepper, 1 tablespoon of lime juice, 1/2 teaspoon of salt and 1/4 teaspoon of pepper.

For the avocado salsa, you will need, 1 large ripe avocado that is peeled, seeded and chopped, 1/2 of a green pepper that is seeded and chopped, 1 tablespoon of chopped jalapeno, ¼ cup of chopped green onion, 1 tablespoon of lime juice, 1/4 teaspoon of salt and 1/4 teaspoon of freshly ground black pepper.

In a large bowl, mix the chopped salmon, bread crumbs, green pepper, jalapeno, egg, green onion, lime juice, salt and pepper. Mix this well and heat an indoor grill pan or outdoor grill to medium-high heat. Then, cook for about 4 minutes on each side until cooked through.

For the salsa, combine avocado, pepper, jalapeno, green onion, lime juice, salt and pepper, mashing the avocado, if desired. Top the burgers with the salsa. Serve with or without a bun and top with tomato and red onion.

Ingredients

Salmon Burger
