Pappardelle with Mushrooms

Pappardelle with Mushrooms

For dinner this week, make Pappardelle with Mushrooms. A simple, yet flavorful mushroom sauce completes this dish.

Ingredients

  • 1 (1 lb.) package pappardelle
  • 6 Tbsp. butter
  • 1 lb. chopped mixed mushrooms
  • 3/4 Tbsp. chopped fresh thyme
  • 6 cloves garlic, minced
  • 3/4 tsp. salt, divided
  • 1/2 tsp. freshly ground black pepper, divided
  • 1 cup ricotta cheese, divided
  • 1/2 cup chopped walnut, toasted
  • 3 Tbsp. honey

Instructions

  1. Cook pappardelle according package directions. Reserve 1/2 cup pasta water, drain remaining and
  2. set aside.
  3. In a large skillet over medium heat, melt butter. Add mushrooms, thyme, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook until mushrooms are golden, about 15 minutes.
  4. Add pasta, reserved water, 1/2 cup ricotta, remaining salt and pepper and walnuts to skillet. Toss to combine. Serve topped with remaining ricotta and drizzle with honey.
