Squash Corn Chowder

Ingredients

  • 3 Tbsp. olive oil
  • 1 cup chopped onion
  • 1 cup diced celery
  • 2 cloves garlic, minced
  • 1/4 cup flour
  • 1 1/2 tsp. dried marjoram
  • 1/4 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 4 cups reduced-sodium chicken broth
  • 1 cup milk
  • 3 cups diced squash
  • 2 cups diced red potatoes
  • 1 cup corn
  • 1 cup diced ham
  • 1/4 cup chopped green onions
  • 1/4 cup shredded pepper Jack cheese

Instructions

  1. Heat oil in a large pot over medium heat. Add onion and celery; cook for 3 to 6 minutes, until softened and beginning to brown. Sprinkle garlic, flour, marjoram, salt and pepper over vegetables and cook for 1 more minute.
  2. Add broth and milk; bring to a gentle boil, stirring constantly. Stir in squash, potatoes and corn. Simmer for 12 to 15 minutes, uncovered, stirring occasionally, until potatoes are tender. Add ham and cook for 2 minutes. Serve warm topped with green onions and cheese.
