Jalapeño Popper Chicken

Ingredients
- 6 boneless, skinless chicken breasts
- 1/2 tsp. freshly ground black pepper
- 1/2 tsp. seasoned salt
- 1/2 tsp. garlic powder
- 6 slices bacon, diced
- 2 jalapeños, deveined, seeded and diced
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 (8 oz.) package cream cheese, softened
- 1/2 cup Greek yogurt
- 1 cup shredded Cheddar cheese
- 1/2 cup shredded Parmesan cheese
- 1/2 cup crushed butter crackers
- 1/2 cup Parmesan cheese
- 4 Tbsp. butter, melted
Directions
- Preheat oven to 400º.
- Season chicken with pepper, seasoned salt and garlic powder. Place in a 9 x 13-inch baking dish and bake for about 30 minutes or until juices run clear.
- Meanwhile, brown bacon in a skillet until almost cooked. Add jalapeños and onions until softened; add garlic and cook 1 minute more.
- In a medium bowl, combine bacon mixture, cream cheese, yogurt and cheeses. Remove chicken from oven and reduce oven heat to 350º. Spread mixture on top of chicken until well-covered.
- For the topping, mix together crushed crackers, cheese and melted butter. Sprinkle on top of chicken. Bake until crackers are lightly browned for about 15 minutes. Serve warm.
