Bacon and Broccoli Pasta Salad
This tasty pasta salad is quite different from your usual recipe, using grapes, bacon and pecans.
What you’ll need:
- 1 cup chopped pecans
- 1/2 lb. bowtie pasta
- 1 lb. fresh broccoli, cut into small florets
- 1 cup mayonnaise
- 1/3 cup sugar
- 1/3 cup diced red onion
- 1/3 cup red wine vinegar
- 1 tsp. salt
- 2 cups seedless red grapes, halved
- 8 slices bacon cooked and crumbled
Directions:
- In a skillet, toast pecans until fragrant, about 5 to 7minutes.
- Meanwhile, prepare pasta according to package directions; drain.
- For the dressing, whisk together mayonnaise, sugar, onion, vinegar and salt in a small bowl. In a large bowl combine broccoli, cooked pasta and grapes. Pour dressing overtop and stir to coat. Cover and chill 3 hours. Stir bacon and pecans into salad just before serving.
