Vegetarian Quesadillas
This healthy recipe can also be topped with avocado and tomatoes!
Ingredients
- 1 (15.5 oz.) can black beans, drained and rinsed
- 1 (14 oz.) can corn, drained
- 1/2 cup chopped green onions
- 1 Tbsp. lime juice
- 3/4 cup salsa, drained
- 1/4 tsp. salt
- 3 Tbsp. chopped cilantro
- 1 (8 count) package flour tortillas
- 1 1/2 cups shredded Monterey Jack cheese
- sour cream, shredded lettuce and guacamole for serving
Directions
- Preheat oven to 400°.
- In a medium bowl, combine beans, corn, green onions, lime juice, salsa, salt and cilantro. Place 4 tortillas on a baking sheet lined with parchment paper. Sprinkle the tortillas with half of the cheese. Using a slotted spoon, top tortillas with the bean mixture. Sprinkle with the remaining cheese and top with the remaining tortillas.
- Bake the quesadillas for 5 to 7 minutes or until the cheese has melted. Transfer to a cutting board.
- Cut each quesadilla into wedges and serve with guacamole, shredded lettuce and sour cream.
