Coconut Shrimp
Serve this recipe as an appetizer at your next party!
Ingredients
- 1/3 cup all-purpose flour
- 1/2 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 2 eggs
- 3/4 cup Panko bread crumbs
- 1 cup sweetened shredded coconut
- 1 lb. raw large shrimp, peeled and deveined with tails attached
- 2 Tbsp. vegetable oil, or as needed
- sweet chili sauce for serving
Directions
- Combine flour, salt and pepper in one bowl. Beat the eggs in a second bowl. Combine bread crumbs and coconut in a third bowl.
- Dip shrimp into flour, then eggs and then dredge the shrimp into coconut mixture, pressing gently to adhere.
- Add oil to a large skillet on medium heat. Fry shrimp in batches, making sure not to crowd them in the pan. Fry shrimp 2 to 3 minutes on each side or until golden brown. Serve with sweet chili sauce.
