Turkey, Bean and Corn Chili

Turkey, Bean and Corn Chili

Perfect for warming you up on those cold, snowy days!

Ingredients

  • 1 cup red onion, chopped
  • 1/3 cup seeded poblano pepper, chopped
  • 2 cloves garlic, minced
  • 1 1/4 lbs. ground turkey
  • 1 Tbsp. chili powder
  • 2 Tbsp. tomato paste
  • 2 tsp. dried oregano
  • 1 tsp. ground cumin
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1 (19 oz.) can cannellini beans, rinsed and drained
  • 1 (14.5 oz.) can diced tomatoes, drained
  • 1 (14.75 oz.) can whole kernel corn
  • 1 (14 oz.) can low-sodium chicken broth
  • 1/2 cup chopped fresh cilantro
  • Saltine crackers

Instructions

  1. Heat a large saucepan over medium heat. Add onion, pepper, garlic and turkey; cook for 6 minutes or until turkey is done. Stir frequently to crumble. Add in chili powder, tomato paste, oregano, cumin, salt, pepper, beans, tomatoes, corn and broth; bring to a boil. Reduce heat and simmer for 10 minutes. Stir in cilantro and serve with saltine crackers.
