Turkey, Bean and Corn Chili
Perfect for warming you up on those cold, snowy days!
Ingredients
- 1 cup red onion, chopped
- 1/3 cup seeded poblano pepper, chopped
- 2 cloves garlic, minced
- 1 1/4 lbs. ground turkey
- 1 Tbsp. chili powder
- 2 Tbsp. tomato paste
- 2 tsp. dried oregano
- 1 tsp. ground cumin
- 1/4 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1 (19 oz.) can cannellini beans, rinsed and drained
- 1 (14.5 oz.) can diced tomatoes, drained
- 1 (14.75 oz.) can whole kernel corn
- 1 (14 oz.) can low-sodium chicken broth
- 1/2 cup chopped fresh cilantro
- Saltine crackers
Instructions
- Heat a large saucepan over medium heat. Add onion, pepper, garlic and turkey; cook for 6 minutes or until turkey is done. Stir frequently to crumble. Add in chili powder, tomato paste, oregano, cumin, salt, pepper, beans, tomatoes, corn and broth; bring to a boil. Reduce heat and simmer for 10 minutes. Stir in cilantro and serve with saltine crackers.
