Apple Walnut Gorgonzola Turnovers

A perfect after school snack that the kids will love.

Ingredients

  • 1 1/2 cups apples, peeled,
  • cored and chopped into 1/2-inch cubes
  • 1/2 cup chopped walnuts
  • 1/4 cup crumbled gorgonzola cheese
  • 1/2 tsp. dried thyme
  • 1/4 tsp. cinnamon
  • 2 Tbsp. honey
  • 2 (7 oz.) prepared puff pastry sheets
  • 1 egg, beaten
  • 1/2 tsp. water

Instructions

  1. Preheat oven to 400°.
  2. Combine apples, walnuts, cheese, thyme, cinnamon and honey in a small bowl. Cut pastry sheets into 3 x 3-inch squares. With a pastry brush, paint a 1/2-inch border around each square with the egg. Place a heaping teaspoon of the apple mixture in the center of the squares. Fold into a triangle shape. Use the tines of a fork to crimp the edges. Place the triangles on a baking sheet lined with parchment paper. Chill for 5 minutes in the refrigerator before baking.
  3. Whisk the water into the remaining egg and glaze the tops of the pastry triangles. Place in oven and cook for 15 to 20 minutes, until nicely puffed and lightly browned. Cool for 20 minutes before serving.
