Cabbage Salad
Perfect for your Labor Day gathering this weekend! It’s healthy, colorful and full of flavor.
Ingredients
- 1/4 cup red wine vinegar
- 1 Tbsp. toasted sesame oil
- 2 Tbsp. plain Greek yogurt
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1/4 tsp. garlic powder
- 2 cups red cabbage, shredded
- 2 cups green cabbage, shredded
- 1/2 red bell pepper, chopped
- 1/2 orange bell pepper, chopped
- 1/2 yellow bell pepper, chopped
- 1/2 cucumber, chopped
- 1/2 cup sugar snap peas, chopped
- 1/4 cup chopped green onion
- 1 pint cherry tomatoes, cut in half
Instructions
- In a small mixing bowl, whisk vinegar, sesame oil and yogurt until well combined. Whisk in salt, pepper and garlic powder. Set aside.
- In a large mixing bowl, toss cabbage, peppers, cucumber, peas, green onions and tomatoes. If serving immediately, toss with dressing.
