Kielbasa and Kale Soup

Kielbasa and Kale Soup

We are warming up with a kielbasa and kale soup. Perfect for these cold winter days!

Ingredients
  • 1 Tbsp. olive oil
  • 1/2 onion, chopped
  • 3 carrots, sliced
  • 1/4 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 2 cloves garlic, minced
  • 1 lb. kielbasa, cut into bite-sized pieces
  • 4 cups chicken broth
  • 1 (15 oz.) can great northern beans, rinsed and drained
  • 1 bay leaf
  • 4 cups kale, chopped
  • 2 Tbsp. grated Parmesan cheese

Instructions

  1. Heat oil in a large pot over medium heat. Add onion, carrots, salt and pepper, cook for about 5 minutes or until tender. Add garlic and cook for 30 seconds. Add kielbasa and cook for 3 more minutes.
  2. Add chicken broth, beans and bay leaf. Turn heat to high and bring to a boil. Stir in kale then cover with lid, turn heat down to medium-low and simmer until kale is tender, about 15 minutes. Stir in grated cheese.
  3. Remove bay leaf and serve with additional cheese sprinkled on top.
