Kielbasa and Kale Soup
We are warming up with a kielbasa and kale soup. Perfect for these cold winter days!
Ingredients
- 1 Tbsp. olive oil
- 1/2 onion, chopped
- 3 carrots, sliced
- 1/4 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 2 cloves garlic, minced
- 1 lb. kielbasa, cut into bite-sized pieces
- 4 cups chicken broth
- 1 (15 oz.) can great northern beans, rinsed and drained
- 1 bay leaf
- 4 cups kale, chopped
- 2 Tbsp. grated Parmesan cheese
Instructions
- Heat oil in a large pot over medium heat. Add onion, carrots, salt and pepper, cook for about 5 minutes or until tender. Add garlic and cook for 30 seconds. Add kielbasa and cook for 3 more minutes.
- Add chicken broth, beans and bay leaf. Turn heat to high and bring to a boil. Stir in kale then cover with lid, turn heat down to medium-low and simmer until kale is tender, about 15 minutes. Stir in grated cheese.
- Remove bay leaf and serve with additional cheese sprinkled on top.
