Broccoli Cheddar Mac and Cheese
Make something for dinner that the kids will love: Broccoli Cheddar Mac and Cheese. Trust us, there’s enough cheese that they won’t even taste the veggies!
Ingredients
- 2 cups elbow macaroni
- 1 broccoli head or 16 oz. package frozen broccoli, cut into florets
- 3 cups milk
- 4 Tbsp. butter
- 3 Tbsp. all-purpose flour
- 1/2 tsp. dry mustard
- 1/4 tsp. paprika
- 1/4 tsp. ground nutmeg
- 1 tsp. ground white pepper
- 1/2 tsp. Worcestershire sauce
- 1/2 tsp. salt
- 2 cups shredded sharp Cheddar cheese, divided
- 1/2 cup shredded Parmesan cheese
Instructions
- Preheat broiler to 500º
- Cook pasta according to package directions and set aside. Steam broccoli until tender. Heat milk on the stovetop.
- Melt butter in a pot on medium-high heat. Sprinkle flour in pot and whisk to combine. Lower heat to medium and cook for 1 to 2 minutes. Pour in hot milk and whisk to combine. Lower heat to medium-low, whisking frequently, until sauce is smooth and thick. Stir in mustard, paprika, nutmeg, pepper, Worcestershire sauce and salt.
- Whisk in 1 1/2 cups Cheddar cheese and Parmesan cheese. Stir until cheese is melted and sauce is smooth. Stir in broccoli and pasta until well combined. Transfer to a baking dish. Sprinkle remaining cheese overtop and place under broiler for 5 to 7 minutes, until bubbly and lightly browned.
