Mediterranean Stuffed Chicken Breasts
Mediterranean stuffed chicken makes an eloquent dinner for guests but is easy to make. It calls for only seven ingredients!
Ingredients
- 1 jar roasted red peppers, finely chopped
- 1/3 cup crumbled Feta cheese
- 2 Tbsp. finely chopped kalamata olives
- 1 Tbsp. fresh basil, finely chopped
- 1/4 tsp. red pepper flakes
- 8 (6 oz.) skinless, boneless chicken breasts
- 1/4 tsp. seasoned salt
- 1/4 tsp. freshly ground black pepper
Instructions
- In a bowl combine roasted red peppers, cheese, olives, basil and red pepper flakes. Cut a horizontal slit through the thickest portion of each chicken breast half to form a pocket. Stuff 2 tablespoons of red pepper mixture into each pocket; close opening with a wooden toothpick.
- Sprinkle chicken with seasoned salt and pepper. Place chicken on a grill pan over medium-high heat. Cook for about 6 to 8 minutes on each side or until done. Remove from pan and serve warm.
