Fruit Salad and Chips
Need a quick side dish? This easy fruit salad is done in minutes! Serve with homemade cinnamon chips.
Ingredients
- 1/2 cup sugar
- 1 1/2 tsp. cinnamon
- 4 flour tortillas
- 2 cups diced strawberries
- 2 kiwi, peeled and diced
- 1/2 cup blueberries
- 1/2 cup raspberries
- 3 Tbsp. sugar-free orange preserves or jam
Instructions
- Preheat oven to 350º.
- Cover a baking sheet with parchment paper. On a large plate, combine sugar and cinnamon. Spray the front and back of each tortilla with cooking spray. Coat each tortilla in cinnamon mixture, then flip to coat other side. With a pizza cutter, cut each tortilla in half and then each half into four pieces, creating wedges. Lay wedges on baking sheet. Bake in oven for 8 to 10 minutes.
- Meanwhile, combine strawberries, kiwi, blueberries, raspberries and preserves in a medium bowl. Serve with cooled cinnamon chips.
