Buffalo Chicken Meatball Subs
Have this recipe waiting for you at home after work; buffalo chicken meatball subs are cooked in the slow cooker and super easy to make. Top these subs with ranch dressing!
Ingredients
- 1 lb. ground chicken breast
- 3/4 cups seasoned bread crumbs
- 1 carrot, minced
- 2 celery stalks, minced
- 1 egg, lightly beaten
- 1 cup plus 2 Tbsp. buffalo hot sauce, divided
- 1/4 cup blue cheese crumbles
- 2 Tbsp. nonfat plain Greek yogurt
- 4 sub rolls
- Ranch dressing for serving
Instructions
- Preheat oven to 450º.
- Coat baking dish with nonstick cooking spray. In a large bowl, combine ground chicken, bread crumbs, carrot, celery, egg and 2 tablespoons buffalo sauce. Roll mixture into 12 balls. Place meatballs in prepared dish and bake for 15 minutes, or until lightly browned and cooked through.
- Transfer meatballs to a slow cooker and pour remaining buffalo sauce on top. Cover and cook on low for 4 hours. In a small bowl combine blue cheese and yogurt. Spread blue cheese spread on inside of rolls. Add meatballs and top with ranch dressing.
