Blackberry Peach Salad

Try blackberry peach salad for lunch or dinner. It’s filled with fresh fruits and a creamy poppy seed dressing overtop.

Ingredients

  • 4 cups salad greens
  • 1/2 cup mixed fresh herbs, parsley, mint, dill, cilantro or basil
  • 1 cup blackberries
  • 4 peaches, pitted and sliced, divided
  • 1 cup frozen corn, thawed and cooked
  • 2 roasted beets
  • 1/4 cup crumbled Feta cheese
  • 1/4 cup toasted sliced almonds
  • 2 Tbsp. olive oil
  • 1 Tbsp. red wine vinegar
  • 1 Tbsp. honey
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 2 tsp. poppy seeds

Instructions

  1. Combine lettuce and herbs in a large bowl. Add blackberries, 2 peaches, corn, beets, cheese and almonds.
  2. To make salad dressing, add remaining 2 peaches, olive oil, vinegar and honey in food processor. Puree to make a smooth dressing. Season with salt and pepper. Stir in poppy seeds. Pour dressing over salad and toss gently to coat.
