Southwestern Salad
Southwestern Salad is fresh, light and full of protein.
Ingredients
- 5 cups chopped romaine lettuce
- 1 cup red quinoa, cooked and chilled
- 1 (15 oz.) can black beans
- 1 (15 oz.) can corn
- 1 cup chopped red pepper
- 1 tomato, chopped
- 2 Tbsp. diced red onion
- 1 avocado, chopped
- 1/4 (10 oz.) container soft silken tofu, drained
- 1/4 cup fresh lime juice
- 2 cloves garlic, minced
- 1 tsp. mustard
- 1 tsp. cider vinegar
- 1/4 cup finely chopped cilantro
- 1/4 tsp. salt
- 1/4 tsp. freshly ground black pepper
Instructions
- Mix lettuce, quinoa, beans, corn, peppers, tomato and onion in a large bowl. Add avocado slices on top.
- Blend tofu, lime juice, garlic, mustard, cider vinegar, cilantro, salt and pepper in a food processor. Sprinkle desired amount of dressing overtop salad mixture.
