Spicy Shrimp and Cauliflower Mash

Ingredients
- 2 Tbsp. olive oil, divided
- 6 cups cauliflower florets
- 6 cloves garlic, minced and divided
- 1 cup milk
- 3 cups vegetable or chicken broth, divided
- 1 (14 oz.) can white beans, rinsed and drained
- 1/2 cup cornmeal
- 1/2 cup shredded Cheddar cheese
- 1 tsp. salt
- 3 slices bacon, cooked and crumbled
- 1 Tbsp. reserved bacon fat
- 3 cups chopped kale
- 1 lb. shrimp
- 1/4 tsp. garlic salt
- 1/4 tsp. freshly ground black pepper
- 1/8 tsp. cayenne pepper
- 2 Tbsp. water
Instructions
- Heat 1 tablespoon olive oil in a large pot. Add cauliflower and 3 cloves garlic. Sauté for a minute, until garlic is fragrant. Add milk and 2 cups broth. Simmer for 10 minutes or until soft. Add beans and mash. Stir in cornmeal. Adjust consistency by adding remaining broth as needed. Stir in cheese and salt.
- Heat bacon fat in a nonstick skillet over medium-low heat. Add bacon, kale and remaining 3 cloves garlic and sauté. Remove mixture and wipe out pan with a paper towel.
- In the same skillet, add remaining 1 tablespoon oil over medium heat. Pat shrimp dry. Add to pan and sprinkle with garlic salt, pepper and cayenne pepper. Cook for just a few minutes and then add water. Cook for another minute. Serve shrimp and kale with cauliflower mash.
