Banana Muffins
Try Banana Muffins for breakfast this week. They’re so delicious!
Ingredients
- 1 1/2 cups plus 2 Tbsp. flour, divided
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- 3 bananas, mashed
- 3/4 cup sugar
- 1 egg, beaten
- 1 tsp. vanilla
- 1/4 tsp. nutmeg
- 6 Tbsp. butter, divided
- 1/3 cup brown sugar
- 1/8 tsp. ground cinnamon
Instructions
- Preheat oven to 375°.
- In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In a separate bowl, beat together bananas, sugar, egg, vanilla, nutmeg and 5 tablespoons of melted butter. Stir banana mixture into flour mixture, until moistened. Spoon batter into a muffin pan lined with paper muffin liners.
- In a small bowl, mix together brown sugar, remaining 2 Tbsp. flour and ground cinnamon. Add remaining 1 Tbsp. butter until mixture is coarse. Sprinkle over muffins and bake in oven for 18 to 20 minutes.
