Double Chocolate Chip Mint Cookies
Double Chocolate Chip Mint Cookies are the ultimate chocolate lover’s dream come true.
Ingredients
- 1 stick unsalted butter, softened
- 1/2 cup brown sugar
- 1/2 cup sugar
- 1 egg
- 2 tsp. vanilla extract
- 1/2 tsp. mint extract, optional
- 1 cup plus 2 Tbsp. flour
- 1/3 cup cocoa powder
- 1/2 tsp. baking soda
- 1 tsp. cornstarch
- 1/2 tsp. salt
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup mint baking bits
Instructions
- Preheat oven to 350º.
- Mix butter until light and fluffy, about 1 minute. Add in sugars and mix until well combined. Add in egg and extract. Mix until combined.
- In a separate bowl, sift together flour, cocoa powder, baking soda, cornstarch and salt. Slowly incorporate dry ingredients into wet ingredients. Mix until just combined.
- Add in chocolate chips and mint baking bits. Mix slowly. Once combined, chill dough in refrigerator for about 20 minutes.
- Scoop dough into dollops and place 2-inches apart on a baking sheet lined with parchment paper. Bake for 13 to 15 minutes, or until cookies are done.
