Veggie Fried Rice
Veggie Fried Rice is a filling side dish that pairs perfectly with chicken or pork!
Ingredients
- 1/2 cup chopped onion
- 2 Tbsp. sesame oil, divided
- 2 cloves garlic, minced
- 1 Tbsp. minced fresh ginger
- 3 eggs
- 4 cups cooked brown rice
- 1 cup frozen corn
- 1 1/2 cups frozen peas and carrots
- 1/2 Tbsp. rice vinegar
- 3 Tbsp. soy sauce
- 4 Tbsp. freshly chopped green onions
Instructions
- In a large pan, sauté onion in 1 tablespoon oil until softened. Add garlic and ginger; cook for 30 seconds. Add eggs and cook for 2 minutes, until barely cooked. Add rice and remaining oil. Increase heat to medium-high and fry for 2 to 3 minutes.
- Add corn, peas and carrots, rice vinegar and soy sauce and cook for another 2 minutes. Remove from heat, stir in green onions and serve.
