Veggie Fried Rice

Veggie Fried Rice is a filling side dish that pairs perfectly with chicken or pork!

Ingredients

  • 1/2 cup chopped onion
  • 2 Tbsp. sesame oil, divided
  • 2 cloves garlic, minced
  • 1 Tbsp. minced fresh ginger
  • 3 eggs
  • 4 cups cooked brown rice
  • 1 cup frozen corn
  • 1 1/2 cups frozen peas and carrots
  • 1/2 Tbsp. rice vinegar
  • 3 Tbsp. soy sauce
  • 4 Tbsp. freshly chopped green onions

Instructions

  1. In a large pan, sauté onion in 1 tablespoon oil until softened. Add garlic and ginger; cook for 30 seconds. Add eggs and cook for 2 minutes, until barely cooked. Add rice and remaining oil. Increase heat to medium-high and fry for 2 to 3 minutes.
  2. Add corn, peas and carrots, rice vinegar and soy sauce and cook for another 2 minutes. Remove from heat, stir in green onions and serve.
