Mediterranean Bowl
Mediterranean Bowls are a great weeknight dinner that can be customized to your liking. Add your favorite toppings to this dish including chicken or beef!
Ingredients
- 1 (16 oz.) jar roasted red peppers, drained
- 1 clove garlic, minced
- 1/2 tsp. salt
- 2 Tbsp. fresh lemon juice
- 1/2 cup olive oil
- 1/2 cup almonds
- 1/2 cup quinoa
- 2 cups spinach
- 2 cups shredded cooked chicken
- 1/2 cup crumbled Feta cheese
- 1/2 cup Kalamata olives
- 1/4 cup red onion, thinly sliced
- Hummus for serving
Instructions
- Pulse red peppers, garlic, salt, lemon juice, olive oil and almonds in food processor until smooth.
- Cook quinoa according to package directions. Build bowls to your liking adding, quinoa, spinach, chicken, cheese, olives, red onion and hummus. Top bowls with red pepper sauce.
