Potato Skin Bites
Ingredients
- 3 russet potatoes, washed
- 2 Tbsp. olive oil
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- Pinch cayenne pepper
- 1 tsp. garlic powder
- 1/2 tsp. onion powder
- 8 slices bacon, cooked and crumbled
- 1 1/2 cups shredded cheddar
- 1/3 cup chopped green onions
- Sour cream for serving
Instructions
- Preheat oven to 400°.
- Slice potatoes into 1/2″ rounds.
- In large bowl, toss potato rounds in olive oil. Season with salt, pepper, cayenne, garlic powder and onion powder. Toss until evenly coated. Place in a single layer on baking sheet. Bake 30-40 minutes.
- Top each potato round with cheese and bacon. Broil until melty.
- Dollop sour cream onto each potato and garnish with green onion.
