Barbacoa Beef

Ingredients
- 1 (3 lb.) roast, cubed
- 2 Tbsp. vegetable oil
- 3-4 chipotle peppers in adobo sauce
- 1 1/4 cups beef broth
- 3 cloves garlic, minced
- 1 1/2 Tbsp. ground cumin
- 1 Tbsp. dried oregano
- 3/4 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 1/4 tsp. ground cloves
- 1/8 tsp. cayenne pepper
- 1/4 cup lime juice
Instructions
- In a large skillet, heat oil over medium-high heat. Season meat with salt and pepper and sear on each side until browned. Transfer to slow cooker.
- In a food processor, blend peppers with beef broth, garlic, cumin, oregano, salt, pepper, cloves, cayenne and lime juice. Pour blended mixture over meat.
- Cook on low for 8 to 9 hours or on high for 6 hours. Shred the meat with two forks. Serve on top of potatoes, pasta or in tacos.
