Gia Russa Tuscan Tortellini Soup
For an easy, hearty weeknight dinner, make Gia Russa Tuscan Tortellini Soup.
Ingredients
- 1 Tbsp. Gia Russa Extra-Virgin Olive Oil
- 1 onion, chopped
- 1 lb. sweet Italian sausage, cut into 1/2-inch slices
- 1 Tbsp. Gia Russa Chopped Garlic
- 1 (28 oz.) can Gia Russa Homestyle Crushed Tomatoes
- 1 (48 oz.) can Gia Russa Low Sodium Chicken Broth
- 1 tsp. red pepper flakes
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1 package Gia Russa Cheese Tortellini
- 1 can Gia Russa Cannellini Beans, rinsed and drained
- 6 oz. fresh baby spinach
- Gia Russa Parmesan Cheese
Instructions
- In a large pot over medium heat, add oil and onion. Cook until soft, about 5 minutes.
- Add sausage, garlic, tomatoes, broth, pepper flakes, salt and pepper. Bring to boil and add tortellini. Reduce heat and simmer until tortellini is cooked, about 15 minutes.
- Stir in beans and spinach. Cook until spinach is wilted. Top with Parmesan and serve.
