Gia Russa Tuscan Tortellini Soup

For an easy, hearty weeknight dinner, make Gia Russa Tuscan Tortellini Soup.

Ingredients

  • 1 Tbsp. Gia Russa Extra-Virgin Olive Oil
  • 1 onion, chopped
  • 1 lb. sweet Italian sausage, cut into 1/2-inch slices
  • 1 Tbsp. Gia Russa Chopped Garlic
  • 1 (28 oz.) can Gia Russa Homestyle Crushed Tomatoes
  • 1 (48 oz.) can Gia Russa Low Sodium Chicken Broth
  • 1 tsp. red pepper flakes
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1 package Gia Russa Cheese Tortellini
  • 1 can Gia Russa Cannellini Beans, rinsed and drained
  • 6 oz. fresh baby spinach
  • Gia Russa Parmesan Cheese

Instructions

  1. In a large pot over medium heat, add oil and onion. Cook until soft, about 5 minutes.
  2. Add sausage, garlic, tomatoes, broth, pepper flakes, salt and pepper. Bring to boil and add tortellini. Reduce heat and simmer until tortellini is cooked, about 15 minutes.
  3. Stir in beans and spinach. Cook until spinach is wilted. Top with Parmesan and serve.
