Chicken Cacciatore

Ingredients
- 1 box spaghetti
- 4 boneless, skinless chicken breasts
- 1/4 cup flour
- 1/4 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 2 Tbsp. olive oil
- 1 onion, chopped
- 2 celery ribs, chopped
- 1 green pepper, cut into strips
- 1 (8 oz.) carton sliced mushrooms
- 1 (28 oz.) can diced tomatoes
- 1 (8 oz.) can tomato sauce
- 1 (6 oz.) can tomato paste
- 1 cup dry red wine
- 1 tsp. dried thyme
- 1 tsp. dried rosemary
- 1 tsp. dried oregano
- 1 tsp. dried basil
- 3 cloves garlic, minced
- 1 Tbsp. sugar
- Grated Parmesan cheese, for garnish
Instructions
- Cook spaghetti according to package directions.
- Coat chicken in flour, salt and pepper. In a large pan over medium-high heat, add oil and brown chicken on all sides. Remove chicken and set aside.
- In the same skillet, add onion, celery, green pepper and mushrooms and cook for 5 minutes. Stir in tomatoes, tomato sauce, tomato paste, wine, thyme, rosemary, oregano, basil, garlic and sugar. Bring to boil, then reduce heat, cover and simmer for 30 minutes.
- Return chicken to skillet. Cover and simmer 45 to 60 minutes. Serve over pasta and garnish with Parmesan.
