Chicken & Rice Alfredo Casserole
For dinner, make Chicken & Rice Alfredo Casserole. Its mild flavors will satisfy even the pickiest of eaters.
Ingredients
- 2 1/2 cups white or brown rice
- 1 (10 oz.) jar Alfredo sauce
- 1/2 cup milk
- 2 cups cubed, cooked chicken
- 2 cups cooked broccoli florets
- 1/3 cup chopped roasted red peppers
- 1/4 cup slivered almonds
- 1/2 tsp. dried basil
- 1/2 cup seasoned bread crumbs
- 1 Tbsp. butter, melted
Instructions
- Preheat oven to 350°.
- Cook rice according to package directions, then set aside.
- In a large bowl, combine Alfredo and milk. Stir in rice, chicken, broccoli, peppers, almonds and basil. Transfer to a glass baking dish. Cover and bake for 30 minutes. Remove from oven and stir.
- In a small bowl, combine bread crumbs and butter. Sprinkle on top of casserole, then bake uncovered for an additional 20 to 25 minutes.
