Chicken & Rice Alfredo Casserole

Chicken & Rice Alfredo Casserole

For dinner, make Chicken & Rice Alfredo Casserole. Its mild flavors will satisfy even the pickiest of eaters.

Ingredients

  • 2 1/2 cups white or brown rice
  • 1 (10 oz.) jar Alfredo sauce
  • 1/2 cup milk
  • 2 cups cubed, cooked chicken
  • 2 cups cooked broccoli florets
  • 1/3 cup chopped roasted red peppers
  • 1/4 cup slivered almonds
  • 1/2 tsp. dried basil
  • 1/2 cup seasoned bread crumbs
  • 1 Tbsp. butter, melted

Instructions

  1. Preheat oven to 350°.
  2. Cook rice according to package directions, then set aside.
  3. In a large bowl, combine Alfredo and milk. Stir in rice, chicken, broccoli, peppers, almonds and basil. Transfer to a glass baking dish. Cover and bake for 30 minutes. Remove from oven and stir.
  4. In a small bowl, combine bread crumbs and butter. Sprinkle on top of casserole, then bake uncovered for an additional 20 to 25 minutes.
