Tuna Patties
For an inexpensive weeknight meal, make Tuna Patties. Lemon, dried dill and Parmesan really elevate the flavor of these patties.
Ingredients
- 3 eggs
- 1 tsp. lemon juice
- 3 Tbsp. grated Parmesan cheese
- 3/4 cup seasoned bread crumbs
- 1 tsp. Old Bay seasoning
- 4 (5 oz.) cans tuna, drained
- 2 tsp. Dijon mustard
- 3 Tbsp. chopped onion
- 1/4 cup chopped celery
- 1/4 tsp. freshly ground black pepper
- 1/2 tsp. dried dill
- Vegetable oil, for cooking
Instructions
- In a small bowl, beat together eggs and lemon juice. In a separate large bowl, combine Parmesan, bread crumbs, Old Bay, tuna, mustard, onion, celery, pepper and dill. Add in egg mixture and stir to combine.
- Shape tuna mixture into eight 1-inch-thick patties. Heat oil in a pan over medium heat. Fry patties about 5 minutes per side, until golden brown.
