Zesty Pasta Salad
For your next cookout, take advantage of all the fresh produce at your local Sparkle and make Zesty Pasta Salad.
Ingredients
- 1 (1 lb.) package fusilli pasta
- 1 pint cherry tomatoes, halved
- 1/2 cup chopped hard salami
- 1/2 cup chopped pepperoni
- 3/4 cup chopped roasted red peppers
- 1/2 cup chopped red onion
- 1/4 cup chopped parsley
- 12 oz. mini Mozzarella balls, drained and halved
- 1 (6 oz.) can black olives, drained and halved
- Vinaigrette
- 1/2 cup red wine vinegar
- 1/2 cup olive oil
- 3 cloves garlic, minced
- 1 Tbsp. honey
- 1 Tbsp. Italian seasoning
- 1/2 tsp. salt
Instructions
- Cook pasta according to package directions. Drain, rinse with cold water and add to a large salad bowl.
- Add tomatoes, salami, pepperoni, peppers, onion, parsley, Mozzarella and olives. Toss to combine.
- In a small bowl, whisk together vinegar, oil, garlic, honey, Italian seasoning and salt. Pour over pasta salad and toss until coated.
