Walking Tacos
Walking Tacos make for a super simple, crowd-pleasing snack, lunch or dinner. Prepare toppings ahead of time, cook the meat in a slow cooker and serve at your next get-together or by the pool!
Ingredients
Salsa
- 1 (14.5 oz.) can diced tomatoes, drained
- 1 tsp. salt
- 1 tsp. cumin
- 1 clove garlic, minced
- 1/2 diced onion
- 2 Tbsp. chopped fresh cilantro
- 1/4 tsp. sugar
- Juice of 1/2 lime
- 1 jalapeño, seeded and diced
Walking Taco
- 1 lb. ground beef
- 1 packet taco seasoning
- 3/4 cup water
- 6 bags zesty corn chips
- 1 cup shredded Cheddar cheese
- 1/2 cup sour cream
- 1 cup shredded lettuce
Instructions
- In a medium bowl, combine tomatoes, salt, cumin, garlic, onion, cilantro, sugar, lime juice and jalapeño. Cover and refrigerate until ready to use.
- In a large skillet over medium heat, add ground beef and cook about 8 minutes. Drain grease and return to stove.
- Add taco seasoning and water to the pan. Stir and bring to boil. Reduce heat to low and let simmer until thickened, about 10 minutes. Transfer taco meat to a serving bowl.
- Open bag of corn chips and assemble walking taco with a scoop of meat, cheese, sour cream and lettuce.
