Cheesy Mushroom Beef Rice

Mushroom and Beef Swiss Rice

Looking for a simple weeknight dinner the kids will love? Make Cheesy Mushroom Beef Rice, complete with a creamy sauce and salty bacon crumbles.

Ingredients

  • 1 1/2 cups instant rice, uncooked
  • 1 lb. ground beef
  • 1 onion, diced
  • 1/2 tsp. garlic powder
  • 8 oz. sliced white mushrooms
  • 1 (10.5 oz.) can cream of mushroom condensed soup
  • 1 cup milk
  • 6 slices bacon, cooked and crumbled
  • 1/2 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 1 1/2 cups shredded Swiss cheese, divided

Instructions

  1. Cook rice according to package instructions. Set aside.
  2. In a large skillet over medium heat, add ground beef, onion and garlic powder. Cook until almost done. Drain grease and return to heat. Add mushrooms and cook about 3 minutes.
  3. Reduce heat to medium-low. Add cream of mushroom soup, milk, bacon crumbles, cooked rice, salt and pepper. Stir to combine and let simmer 8 minutes.
  4. Stir in 1 cup of Swiss cheese, then top with remaining 1/2 cup. Allow the cheese to melt on top before serving.
