Cheesy Mushroom Beef Rice
Looking for a simple weeknight dinner the kids will love? Make Cheesy Mushroom Beef Rice, complete with a creamy sauce and salty bacon crumbles.
Ingredients
- 1 1/2 cups instant rice, uncooked
- 1 lb. ground beef
- 1 onion, diced
- 1/2 tsp. garlic powder
- 8 oz. sliced white mushrooms
- 1 (10.5 oz.) can cream of mushroom condensed soup
- 1 cup milk
- 6 slices bacon, cooked and crumbled
- 1/2 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 1 1/2 cups shredded Swiss cheese, divided
Instructions
- Cook rice according to package instructions. Set aside.
- In a large skillet over medium heat, add ground beef, onion and garlic powder. Cook until almost done. Drain grease and return to heat. Add mushrooms and cook about 3 minutes.
- Reduce heat to medium-low. Add cream of mushroom soup, milk, bacon crumbles, cooked rice, salt and pepper. Stir to combine and let simmer 8 minutes.
- Stir in 1 cup of Swiss cheese, then top with remaining 1/2 cup. Allow the cheese to melt on top before serving.
