Kielbasa Cheddar Soup

Kielbasa Cheddar Soup

Not interested in dirtying lots of dishes? Make Kielbasa Cheddar Soup, using just one pot and pan.

Ingredients

  • 1 Tbsp. olive oil
  • 1 lb. kielbasa sausage, sliced
  • 1 onion, chopped
  • 1 cup diced carrots
  • 1 cup diced celery
  • 4 cups low-sodium chicken broth
  • 2 lbs. red potatoes, peeled and diced
  • 3 Tbsp. butter
  • 1/4 cup flour
  • 3 cups milk
  • 1 1/2 cups shredded Cheddar cheese
  • 1/2 tsp. salt
  • 1 tsp. freshly ground black pepper
  • 3 Tbsp. chopped fresh parsley

Instructions

  1. In a large pot over medium-high heat, add oil and kielbasa. Cook until browned, about 5 minutes. Transfer to a plate.
  2. Add onion, carrots and celery to pot and cook 5 minutes. Stir in chicken broth and potatoes. Bring to a boil, then cover, reduce heat to medium-low and let simmer about 15 to 20 minutes.
  3. In a small pan over medium heat, melt butter. Whisk in flour and let cook 1 minute. Stir flour mixture into soup, then stir in milk, cheese, salt, pepper and kielbasa. Remove from heat and serve garnished with parsley.
