Hawaiian Pork Loin

Pork loin is on sale this week at your local Sparkle and Megan’s giving you the perfect dinner recipe for it. We’re cutting slices in the roast and adding pineapple slices and barbecue sauce to make an easy and delicious dinner the whole family will love. Pair it with some fresh green beans and rice for a balanced meal.

The ingredients needed to make this delicious pork loin are 2-3 pounds of pork loin roast, 1/2 teaspoon of salt and pepper, 1 can of pineapple rings with the juices reserved, 1 16 ounce bottle of your favorite barbecue sauce (ours is Sweet Baby Ray’s, which you can find at your local Sparkle), 2 teaspoons of Dijon mustard, 1 teaspoon of hot sauce (if you don’t like spice, you can skip this ingredient), 1/2 teaspoon of onion powder, 1 chopped red bell pepper, 3 cloves of minced garlic, and 1/4 cup of chopped red onion.

Now let’s get to cooking! First, preheat your oven to 450º. Place your pork loin on a cutting board and make slices into the meat every inch or so. Make sure you don’t cut all the way through the meat, because we want our pineapple slices to sit inside each slit. Next, season your pork loin with salt and pepper, then fill each slit in the meat with a pineapple slice. Then transfer this to a medium to large baking dish, depending on the size of your pork roast.

In a medium bowl, stir together all of the ingredients for the sauce: barbecue sauce, 1/2 cup of pineapple juice from your pineapple slices can, mustard, hot sauce and onion powder. Next, add in the red pepper, garlic and red onion and stir together until everything is well combined. Pour this sauce over the pork loin.

Put the dish in the oven and bake for 10-12 minutes, until the pork is starting to get crispy. Then lower the heat of your oven to 350º and cook for an additional 45 minutes to an hour. The final cook time will depend on the size of the pork loin. Use an instant read thermometer to ensure the pork is cooked all the way through, which is 145º. Let the pork rest for a few minutes before serving, and you have a delicious dish that is sure to be a family favorite!

Instructions

  • Transfer to a large baking dish and season pork with salt and pepper. Fill each slice with a pineapple ring.
  • In a medium bowl, stir together barbecue sauce, ½ cup reserved pineapple juice, mustard, hot sauce and onion powder. Add red pepper, garlic and red onion. Pour sauce over pork loin and bake 10-12 minutes. Lower heat to 350º and cook for another 45-60 minutes, depending on the size of the roast. An instant read thermometer should read 145º.
