Kielbasa and Sauerkraut with Mustard Sauce
An easy New Year’s recipe to bring good luck! After you try this one, you’ll want to make this every year. The kielbasa gets nice and crispy in the skillet and the mustard sauce drizzled overtop gives this dish a nice and very different flavor to the traditional pork and kraut recipe you’re probably used to.
To start, you’ll need 2 pounds of smoked Polska kielbasa, cut in half and then into 3-inch pieces, 2 tablespoons of butter, 3 tablespoons of sugar, 1 sliced onion, 3 cups of drained sauerkraut, 1/4 of a cup of yellow mustard, 1/4 of a cup of Dijon mustard, 1/4 of a cup of honey, 1/2 a teaspoon of cayenne pepper, 1 tablespoon of prepared horseradish, 1/4 of a teaspoon of salt, 1/4 of a teaspoon of freshly ground black pepper and 3 tablespoons of freshly chopped parsley.
Cook kielbasa pieces in a large skillet for 4 to 5 minutes on each side, turning frequently until browned; transfer to a plate. In the same skillet over medium-high heat, add butter and sugar. Allow sugar to cook to a golden brown color. Add onions and cook until caramelized. Stir in sauerkraut and cook for 5 to 6 minutes until onions and sauerkraut are wilted and colored. Add kielbasa to the skillet and toss together until warm.
In a small bowl, mix mustards, honey, cayenne, horseradish, salt and pepper until well combined. Transfer kielbasa and sauerkraut to a platter, garnish with parsley and serve with honey mustard sauce.
