Pasta Fagioli
We’ve gotten a couple requests for this recipe. As the weather starts to cool down a bit, this is perfect for a chilly night. This homemade recipe is from Sparkle owner, Tony Modarelli. This is an Italian favorite is done in just a few minutes and you won’t want to miss it!
For the pasta fagioli, you’ll need 1/2 pound of Sparkle bulk sausage, 1 clove of minced garlic, 5 fresh basil leaves that are cut in half, 1/2 teaspoon of dried oregano, divided, 1 tablespoon of hot Hungarian paprika, 1 28 oz. can of tomato sauce, 1 15 oz. can of rinsed and drained navy, cannellini or great northern beans, 1/2 pound of ditalini pasta and Romano cheese for serving.
Start by browning and chopping the sausage in a saucepan until cooked through. Add the garlic, half of the basil and 1/4 teaspoon oregano. Let this cook until the garlic starts to brown and then sprinkle in the paprika. Then, let this cook for 5 to 10 seconds or until it starts to change color. Do not over cook paprika; it will burn quickly. Add tomato sauce and remaining herbs and let simmer for 10 to 15 minutes.
Meanwhile cook pasta according to package directions, reserving 1/4 to 1/2 cup water in pan. Add your beans to the tomato sauce mixture. Add sauce to pasta and mix together. Transfer into a serving dish and sprinkle with cheese.

- 1/2 lb. Sparkle bulk sausage
