Chocolate Chip Banana Oatmeal Cookies
These cookies will melt in your mouth. They’re made with no butter or eggs!
Ingredients
- 3/4 cup whole wheat flour
- 1/2 cup rolled oats
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1 Tbsp. coconut oil, melted
- 1 ripe banana, mashed
- 1/4 cup brown sugar
- 1 tsp. vanilla extract
- 1/3 cup chocolate chips
Instructions
- Preheat oven to 350º.
- Line a baking sheet with parchment paper and set aside. In a large mixing bowl combine flour, oats, baking powder and salt. Set aside.
- In a medium mixing bowl, whisk together coconut oil, banana, brown sugar and vanilla. Mix wet ingredients into dry ingredients until combined. Fold in chocolate chips. Using a rounded tablespoon, drop dough onto prepared baking sheet and flatten slightly.
- Bake for 12 to 14 minutes or until edges begin to turn golden brown. Remove from oven and let cool for 5 minutes before transferring to a cooling rack to cool completely.
