No Mayo Healthy Broccoli Salad

No Mayo Healthy Broccoli Salad is packed full of fresh ingredients that are in season!

Ingredients

  • 1 1/2 lbs. fresh broccoli, cut into bite-size pieces
  • 1 cup fresh blueberries
  • 1/4 cup finely chopped red onion
  • 1/2 cup dried cranberries
  • 1/4 cup sunflower seeds
  • 1 large apple, cut into bite-size pieces
  • 1 Tbsp. lemon juice
  • 1 cup plain 2% Greek yogurt
  • 1/4 cup honey
  • 2 tsp. apple cider vinegar
  • 1 Tbsp. poppy seeds

Instructions

  1. Place broccoli, blueberries, onion, cranberries and sunflower seeds in large bowl. In a small bowl, toss apple with lemon juice and add to broccoli mixture.
  2. In a small bowl, whisk together yogurt, honey, vinegar and poppy seeds. Pour dressing over salad and toss to combine.
