Quinoa, Spinach and Cheese Stuffed Peppers
This is a tasty vegetarian meal that is simple to make!
What you’ll need:
- 2 yellow peppers cut in half and seeds removed
- 6 spears asparagus, cut into
- 1-inch pieces
- 2 Tbsp. olive oil
- 3 cloves garlic, minced
- 1 cup chopped onion
- 1/4 cup chopped green onion
- 1/4 cup chopped cilantro
- 1 cup spinach
- 1 cup corn
- 1/2 tsp. ground cumin
- 1/2 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 1 cup cooked quinoa
- 1/2 cup Feta cheese
How to make it:
- Preheat oven to 350°.
- Sauté asparagus in olive oil for 2 minutes. Add garlic, onions and green onion and sauté until soft. Add cilantro and spinach and sauté until wilted. Add corn, cumin, salt, pepper and quinoa and heat through. Stuff into pepper halves and top with crumbled Feta cheese. Bake for 25 minutes.
