Caramelized Pork Tacos
Ingredients
- 1 lb. boneless center cut pork loin, cut into thin strips
- 1 shallot, minced
- 2 cloves garlic, minced
- 2 tsp. Worcestershire sauce
- 1/2 cup crushed pineapple
- 1/2 cup diced cucumber
- 1/3 cup sliced green onions
- 2 Tbsp. freshly squeezed lime juice
- 1/4 cup chopped cilantro
- 1/4 cup diced onion
- 1/4 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 2 Tbsp. olive oil
- 2 tsp. sugar
- 2 tsp. water
Instructions
- Flour or corn tortillas for serving
- In a bowl, mix together pork, shallot, garlic and Worcestershire sauce. In a separate bowl, mix together pineapple, cucumber, green onions, lime juice, cilantro and onion. Season with salt and pepper. Set aside.
- Heat cast iron pan over medium-high heat and add oil to the pan. Cook pork for 2 minutes or until cooked through. Add sugar and water. Stir and cook for another 3 minutes or until the sugar caramelizes and turns golden brown. Remove from the pan and set aside. Serve pork on warmed tortillas with pineapple salsa.
