Spinach and Basil Artichoke Toasts
Spinach and basil artichoke toasts make a colorful appetizer for football tailgates and gatherings. It only takes 10 minutes to make!
Ingredients
- 1 clove garlic, peeled
- 1 (14 oz.) can chickpeas, rinsed and drained
- 1/2 cup fresh basil, divided
- 2 Tbsp. freshly squeezed lemon juice
- 1/3 cup olive oil
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1 1/4 cup artichoke hearts, drained and chopped
- 2 cups spinach
- 10 small pieces French baguette bread, toasted
Instructions
- Pulse garlic, chickpeas and 1/4 cup basil in a food processor until finely minced.
- Cut remaining basil into ribbons. Toss chickpea mixture with lemon juice, remaining basil, olive oil, salt, pepper and artichoke hearts.
- Add spinach just before serving and stir. Serve on toasted bread.
