Creamy Smoked Salmon Pasta

Ingredients
- 9 oz. egg pappardelle pasta
- 2 Tbsp. olive oil
- 3 Tbsp. shallot, finely chopped
- 3 cloves garlic, minced
- 2 Tbsp. dry white wine
- 1 Tbsp. tomato paste
- 1 cup heavy cream
- 1 Tbsp. drained capers
- 1 1/2 Tbsp. fresh dill, chopped, divided
- 1 tsp. lemon zest
- 1/4 tsp. freshly ground black pepper
- 8 oz. smoked salmon, cut into 1-inch pieces
Instructions
- Cook pasta according to package directions.
- Meanwhile, heat oil in a skillet over medium heat. Add shallot and cook for about 2 minutes, until browned. Add garlic and wine, cook for 30 seconds more. Stir in tomato paste and cream. Cook for 3 to 4 minutes, until slightly thickened. Stir in capers, 1 tablespoon dill, lemon zest, pepper and salmon. Cook for 2 to 3 minutes more. Add pasta and toss to coat.
