Spring Barley Soup

Ingredients
- 1 Tbsp. olive oil
- 1 tsp. finely chopped ginger
- 3 cloves garlic, finely chopped
- 1 finely diced onion
- 3/4 cup whole barley
- 1/2 cup finely diced carrots
- 3 finely diced celery stalk
- 5 chopped asparagus spears
- 1 finely diced tomato
- 2 cups chicken stock
- 3 cups water
- 1 tsp. dried thyme
- 1/4 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1/4 cup chopped green onion
Instructions
- Heat oil in a large pot on medium heat. Add ginger and garlic; sauté for 30 to 40 seconds, until fragrant.
- Add onion and sauté for 1 to 2 minutes. Add barley, carrots, celery, asparagus, tomato, chicken stock, water, thyme, salt and pepper and bring to a boil. Simmer on low heat for about 20 minutes or until barley is tender. Garnish with green onions.
