Black Bean Salad
Black Bean Salad is an easy side dish or appetizer idea for your guests. Make this recipe for Cinco de Mayo!
Ingredients
- 2 (15 oz.) cans black beans, rinsed and drained
- 1 (15 oz.) can corn, drained
- 2 red bell peppers, diced
- 2 cloves garlic, minced
- 2 Tbsp. shallot, minced
- 2 tsp. salt
- 1 jalapeño, chopped
- 1 Tbsp. sugar
- 9 Tbsp. olive oil
- 1 tsp. lime zest
- 6 Tbsp. fresh lime juice
- 1/2 cup freshly chopped cilantro
- 2 avocados, pitted and chopped
- Tortilla chips for serving
Instructions
- Combine all ingredients except for avocados in a large bowl. Cover and chill for a few hours.
- Right before serving, add avocados and mix gently. Garnish with cilantro and serve with tortilla chips.
