Black Bean Salad

Black Bean Salad is an easy side dish or appetizer idea for your guests. Make this recipe for Cinco de Mayo!

Ingredients

  • 2 (15 oz.) cans black beans, rinsed and drained
  • 1 (15 oz.) can corn, drained
  • 2 red bell peppers, diced
  • 2 cloves garlic, minced
  • 2 Tbsp. shallot, minced
  • 2 tsp. salt
  • 1 jalapeño, chopped
  • 1 Tbsp. sugar
  • 9 Tbsp. olive oil
  • 1 tsp. lime zest
  • 6 Tbsp. fresh lime juice
  • 1/2 cup freshly chopped cilantro
  • 2 avocados, pitted and chopped
  • Tortilla chips for serving

Instructions

  1. Combine all ingredients except for avocados in a large bowl. Cover and chill for a few hours.
  2. Right before serving, add avocados and mix gently. Garnish with cilantro and serve with tortilla chips.
