No Mayo Healthy Broccoli Salad
No Mayo Healthy Broccoli Salad is packed full of fresh ingredients that are in season!
Ingredients
- 1 1/2 lbs. fresh broccoli, cut into bite-size pieces
- 1 cup fresh blueberries
- 1/4 cup finely chopped red onion
- 1/2 cup dried cranberries
- 1/4 cup sunflower seeds
- 1 large apple, cut into bite-size pieces
- 1 Tbsp. lemon juice
- 1 cup plain 2% Greek yogurt
- 1/4 cup honey
- 2 tsp. apple cider vinegar
- 1 Tbsp. poppy seeds
Instructions
- Place broccoli, blueberries, onion, cranberries and sunflower seeds in large bowl. In a small bowl, toss apple with lemon juice and add to broccoli mixture.
- In a small bowl, whisk together yogurt, honey, vinegar and poppy seeds. Pour dressing over salad and toss to combine.
