Butterscotch Cookies
Butterscotch Cookies are soft in the middle and crispy around the edges. Such a simple cookie, but so delicious!
Ingredients
- 1 stick butter, softened
- 3/4 cup brown sugar
- 1/2 cup granulated sugar
- 1 1/2 tsp. vanilla extract
- 2 eggs
- 2 1/2 cups flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1/2 tsp. ground cinnamon
- 1 (11 oz.) bag butterscotch chips
Instructions
- In a large bowl, cream together butter, sugars and vanilla extract until fluffy. Add eggs and mix until well combined.
- In a medium bowl, whisk together flour, baking soda, salt and cinnamon. Add dry ingredients to
- wet ingredients. Cover bowl with plastic wrap and refrigerate for 30 minutes.
- Preheat oven to 350°.
- Line a large baking sheet with parchment paper and scoop one tablespoon of dough at a time onto the baking sheet. Bake cookies for 10 to 12 minutes.
