Veggie Pasta Salad
Need a side dish for your upcoming cookout or picnic? Make Veggie Pasta Salad! This vegetarian dish is filled with a variety of fresh vegetables and flavor.
Ingredients
- 1/2 cup plain Greek yogurt
- 1/4 cup mayonnaise
- 1/4 cup buttermilk
- 2 Tbsp. white balsamic vinegar
- 1 Tbsp. olive oil
- 1 tsp. hot sauce
- 1/4 tsp. crushed red pepper flakes
- 1/2 tsp. salt
- 1 lb. pasta
- 2 cups cooked shredded chicken
- 1 pint cherry tomatoes, cut in half
- 2 peaches, diced
- 1 1/2 cups corn
- 3 cups arugula or spinach
- 4 hard-boiled eggs, diced
- 8 oz. Mozzarella balls, cut in half
- 1/2 cup sunflower seeds
- 1/2 cup sliced almonds
Instructions
- Whisk together yogurt, mayonnaise, buttermilk, white wine vinegar, olive oil, hot sauce, crushed red pepper and salt. Set aside.
- Bring a large pot of salted water to a boil, add pasta and cook until al dente. Drain and set aside.
- Toss pasta, chicken, tomatoes, peaches, corn, arugula, eggs, cheese, sunflower seeds and almonds in a large bowl. Drizzle dressing on top and toss to coat. Season to taste with salt and pepper.
