Sausage Breakfast Taquitos

For breakfast, make Sausage Breakfast Taquitos. Served with a lime dipping sauce, these taquitos will add a kick to your normal morning routine.

Ingredients

  • Taquitos
  • 10-12 corn tortillas
  • 3 eggs, scrambled
  • 1/2 lb. Italian sausage, cooked
  • 1/4 cup sun dried tomatoes, drained
  • 1 avocado, peeled, pitted and diced
  • 1 cup shredded Cheddar cheese
  • Dipping Sauce
  • 1 1/2 cups sour cream
  • 1 Tbsp. lime juice
  • 1/4 tsp. chipotle chili powder
  • 1/2 tsp. salt

Instructions

  1. Taquitos
  2. Preheat oven to 425°.
  3. Spread tortillas out on a work surface. Divide egg, sausage, tomatoes, avocado and cheese evenly onto each tortilla. Roll tortillas and place seam side down onto a baking sheet lined with parchment paper. Bake for about 12 minutes, until crispy.
  4. Dipping Sauce
  5. In a small bowl, combine sour cream, lime juice, chili powder and salt. Serve with taquitos.
