Sausage Breakfast Taquitos
For breakfast, make Sausage Breakfast Taquitos. Served with a lime dipping sauce, these taquitos will add a kick to your normal morning routine.
Ingredients
- Taquitos
- 10-12 corn tortillas
- 3 eggs, scrambled
- 1/2 lb. Italian sausage, cooked
- 1/4 cup sun dried tomatoes, drained
- 1 avocado, peeled, pitted and diced
- 1 cup shredded Cheddar cheese
- Dipping Sauce
- 1 1/2 cups sour cream
- 1 Tbsp. lime juice
- 1/4 tsp. chipotle chili powder
- 1/2 tsp. salt
Instructions
- Taquitos
- Preheat oven to 425°.
- Spread tortillas out on a work surface. Divide egg, sausage, tomatoes, avocado and cheese evenly onto each tortilla. Roll tortillas and place seam side down onto a baking sheet lined with parchment paper. Bake for about 12 minutes, until crispy.
- Dipping Sauce
- In a small bowl, combine sour cream, lime juice, chili powder and salt. Serve with taquitos.
